I have an approved AOS EAD but my H-1B was also renewed. Does having EAD mean I must use it, or can I keep working on H-1B and treat EAD as backup?

If you keep working under valid H-1B terms with the same employer, many people treat EAD as backup.

Having an EAD does not necessarily mean you are using it.
